Remastering a classic: How Rutz is celebrating its 25th birthday

Icons cannot be reinvented. They deserve to be remastered. A rule that applies to all art forms, from music to cuisine. This philosophical consideration gave rise to ‘25 Years Rutz Remastered’: Berlin's only three-Michelin-star restaurant is celebrating its 25th birthday until 3 April. Executive chef Marco Müller is revisiting outstanding dishes from an eventful quarter of a century.

12 March 2001: Techno classics such as Gravity by Monolake boom out of the speakers in clubs in Berlin-Mitte. Surrounded by this typical Berlin sound, Anja and Carsten Schmidt founded Rutz with sommelier Lars Rutz (d. 2003).

For a quarter of a century, the restaurant with its purist, regional cuisine has been an inseparable part of Berlin's DNA. An anniversary that deserves to be celebrated. Rutz doesn't need to reinvent itself for this – but it doesn't want to simply revel in nostalgia either. No mourning the old, no overturning the tried and tested. Instead: 25 years Rutz Remastered.

"Techno from the 90s and 2000s is still celebrated today and, like a fine Barolo, improves with age. Fundamentally, the sound hasn't gotten any better since then – but it has definitely become clearer, with higher resolution and more technically sophisticated. What works in a club also applies in the kitchen: a remaster of the icons always creates a great atmosphere."

Marco Müller created an inspirational 11-course menu for Rutz Remastered. Each dish draws on an idea from the history of the cuisine. The 2026 remasters remain true to the original and revive its character in a modern form: condensed to the essentials, adapted to the level of three stars.

Four hands, six stars: Müller X Geunes

The Rutz team has come up with a few more specials for its 2026 anniversary year. Foodies can look forward to several four-handed dinners with top international chefs. Marco Müller's first partner will be Viki Geunes from Zilte in Antwerp, who will join him in the kitchen on 8 March. The Belgian, who has also been decorated with three Michelin stars, fits perfectly into Berlin-Mitte with his non-conformist style and unconventional flavour combinations.

Like a good album: 11 courses and a bonus track

Müller modelled the menu for 25 Years Rutz Remastered on the concept of an album. Both should be enjoyed in their entirety and in the correct order to better understand the artist's signature style. In addition to the 11 courses, there is also a caviar course as a bonus track.

About Rutz

Continuity paired with constant evolution. For over 20 years, executive chef Marco Müller has been shaping Berlin's Rutz restaurant with his purist approach – focusing on two outstanding flavours in each dish. Founded in 2001 by Anja and Carsten Schmidt and the late sommelier Lars Rutz, Rutz is now one of the few independent top restaurants in Germany – without any hotel affiliation or sponsors.

Since 2022, Rutz has focused exclusively on its restaurant business in Berlin-Mitte, while the original concept of the wine bar lives on at Rutz Zollhaus in Kreuzberg. The comprehensive redesign by acclaimed Berlin architect Prof. Gesine Weinmiller gives the two-storey restaurant with summer terrace a minimalist, elegant ambience. Regional and international materials – such as natural Bavarian stone and Japanese designer chairs – underline the uncompromising quality. A central, two-storey shelving unit with preserves symbolises the connection between design and culinary art. Anja Schmidt sums it up: “As with a custom-made suit, we have interwoven the workshop, kitchen and dining area.”
