The atmospheric terrace of Marguita restaurant at Baur au Lac has become one of the hottest summer locations in Zurich in just a few months. Its Mediterranean flair and contemporary design, which has delighted both local and international guests since its opening in June, continues seamlessly through to the interior. This has just opened in time for autumn.

Timeless grace

Built in 1914 as a dance pavilion and attached to Baur au Lac, the building has provided an environment for many different purposes over the decades. Most recently, it housed a Michelin-starred restaurant. Its listed architecture resonates with the unusual, unique and playful, which has always given rise to experimentation with materials and shapes. One hundred and ten years after its original opening, this space once again enchants with pure joie de vivre.

Southern charm in every detail

The internationally renowned designer Martin Brudnizki, who successfully designed Baur's in 2019, has once again demonstrated his flair with Marguita. He has seamlessly merged influences from Switzerland with those of the Mediterranean region. Thus, the ambience of the restaurant skilfully reflects the Mediterranean style of cuisine – with a Swiss twist.

Throughout the restaurant, there is an inherent connection to the outside world. Warm colours and select design elements breathe southern charm into the historic building. There are numerous floral details and hand-painted plant motifs such as olive branches and edelweiss, inspired by the regional flora and fauna as well as the lush gardens around the restaurant. Using the building’s original floors as inspiration, Martin Brudnizki's design studio has created a mosaic pattern that continues the lush botanical theme. This elaborate floral mosaic floor can be seen throughout the restaurant. Swiss craftmanship is evident in the furniture, including the bar. Depending on the season, the chairs are upholstered in linen or mohair fabric for comfort. The restaurant is flooded with natural light thanks to its architecture. The chandelier, finished with Venetian Murano glass, provides an extra radiant accent.

Mediterranean feel-good dishes at the highest level

The Mediterranean concept is brilliantly interpreted in the culinary offering by head chef Maximilian Müller. For months, he searched for the best products and experimented with his team to create a multi-faceted menu. Since the opening of the terrace in June, his Mediterranean creations such as Sea Bass in Salt Crust have become popular classics with guests. Fortunately, there's no need to miss out on these (or other favourite dishes) indoors, as they will remain on the menu. From October, autumn-inspired changes can also be expected, such as Braised Veal Cheek and Lobster Thermidor.

A wine list that transports you to the south

The wine selection by top sommeliers Aurélien Blanc and Marc Almert, who developed it over numerous tasting sessions, was just as enthusiastically received as the menu. The wine list for Marguita comprises around 150 items. A third of these come from the extensive range of Baur au Lac Vins, the wine retailer owned by Baur au Lac. The rest of the wines have been sourced especially for Marguita. The menu includes Mediterranean icons from Alvaro Palacios and Tenuta Sette Cieli, for example, but also insider tips and native grape variety discoveries from the Mediterranean region, as well as the exciting non-alcoholic sparkling wines from French Bloom. Of course, guests also have access to the hotel's ‘Grand Wine List’. With over 700 items, it is one of the best-stocked wine lists in Switzerland.

My family is the seventh generation to run Baur au Lac. Continuous evolution is essential for the future success of the entire hotel. Marguita is in line with this philosophy and we are delighted to have set an important course for the future.

About Marguita

Marguita restaurant will open at Baur au Lac in summer 2024 and is inspired by the Mediterranean lifestyle. The extended terrace with a view of Lake Zurich in the picturesque park of Baur au Lac rounds off the unique feel-good ambience. The restaurant and terrace have been designed with great sensitivity by star designer Martin Brudnitzk. The menu will feature classic Mediterranean dishes, cleverly interpreted by head chef Maximilian Müller. These will be accompanied by selected wines from head sommelier Marc Almert. Restaurant manager Aurélien Blanc will provide the usual excellent service.
